About Our Dessert

 

This tart is currently 20% off for the experimentation of it as we perfect the recipe. It is out of this world delicious still, though in the future I would love to refine my custard recipe.

Organic pears are poached with cinnamon stick, rosemary sprig, cardamom pods, dried orange slices, cloves, maple, and dried Cordyceps from Terrestrial Fungi in Warren, MI.

They are laid upon grain- and nut-free tart crusts filled with a vanilla and astragalus custard, topped with candied walnuts, and a sprinkle of fresh rosemary.  

From sprouting our buckwheat groats to increase digestibility and neutralize flavor, to dehydrating and grinding into flour, we keep all ingredients in as pure of a form as possible.

All of our products are vegan, almost all are nut-free, and use very minimal amounts of tahini, our only seed product, in pies & fillings as a fatty binder. We only sweeten with organic local maple and medjool dates. Our only oil is unrefined extra virgin coconut oil, and only when necessary.

We use no inorganic ingredients, industrial plant oils, or generic brand spices. We use only heavy metal tested and microplastic free salt.

 


Ingredients 

100% organic, handmade.

Crust: sprouted buckwheat, local maple syrup, coconut oil, coconut flour, tahini.
Astragalus Custard: Guar free coconut milk, local maple syrup, filtered water, guar free coconut milk, tapioca flour, vanilla extract, astragalus root powder, salt.

Rosemary + Cordyceps Poached Pear: organic pear, peeled and poached in: Filtered water, local maple syrup, cinnamon stick, rosemary sprig, cardamom pods, dried orange slices, cloves, maple, and dried Cordyceps (from Terrestrial Fungi in Warren, MI), vanilla extract.

Candied Walnuts: raw organic walnuts, maple syrup, maple sugar, vanilla, salt, dehydrated until crisp.
