These cookies are larger than the sizes I usually make. They are a shortbread-like cookie made with sprouted buckwheat (botanically a berry, not a grain) nothing like the toasted buckwheat flour you’re used to buying at stores. It’s more similar to a light all purpose flour. Dipped in my signature raw white chocolate, the light and bright elements of summer and sunshine.
